Moist Delicious Muffins sure to make your vegan guests ecstatic!



    • 2 cups all purpose flour
    • 1½  tsp. baking soda
    • ½ tsp. salt
    • Orange Zest from 2 small oranges
    • ¾ cup sugar
    • 1 cup vanilla soy milk (can use rice milk)
    • 1/3 cup canola oil
    • 1 tbsp. apple cider vinegar
    • 1½ cup fresh or frozen blueberries


Preheat oven to 375F. 

Spray muffin tin with cooking spray.

In medium bowl, combine flour, baking soda, salt and orange zest.

In large bowl, combine sugar, soy milk, oil,  and vinegar.  Mix well.

Add dry ingredients to the wet ingredients, stir until just combined.  Don’t over stir.

Gently fold in berries using spatula.

Fill muffin tins and bake for approximately 20 to 25 min.

Remove from oven and let cool 5 min before removing muffins from tin. Cool on wire rack.


You can exchange orange zest for lemon and add 1 tsp lemon extract.
